The “fancy” indicates the highest quality variety of rice, which means it holds its shape in recipes like pilafs, stir-fries, and more. “Medium grain” indicates that the rice grains are slightly shorter than long grain varieties, which makes it ideal for making risotto or paella. How to Cook Medium Grain Fancy Rice
Soak and rinse the rice prior to cooking. Pour 1.5 cups of water and one cup of medium grain fancy rice in a cooking pot. Bring to a boil over high heat. Reduce heat to medium-low, cover and simmer for 15-20 minutes. The rice should be tender and all the water should be absorbed. Allow to stand for three to five minutes. Fluff with a fork and serve.
